Sifting wheat is a repeated, swift, and violent shaking of the wheat in a sieve. The point of sifting wheat is to separate off the rubbish. There are various views about the details of sifting wheat. One explanation of the figure is that the heads and stalks of wheat were beaten and trampled on the threshing floor. Then small quantities of the broken mass were placed in a sieve to be violently shaken so that the wind would blow the chaff away, leaving behind the wheat. The vigorous shaking causes the chaff to rise to the surface so that it can be thrown away.
